Our children refuse to eat soup. Obviously, they are crazy heathens who don’t know what they are missing out on. We have tried luring them with various recipes, but nothing works. Regardless, we keep turning to soup time and time again. Some nights, nothing satisfies like a big, hot, filling bowl of taste.

7 Favorite Soup recipes

Here are our favorite soup recipes:

White Bean, Sausage & Kale

This is by far our favorite soup recipe, courtesy Rachael Ray. We have served it countless times and it is always a hit.  Substitute Spicy Italian Turkey Sausage links for a healthier option and up the amount of chicken broth.

Spicy Shrimp Bok Choy

Ah yes, the grown-up version of Ramen.  Because sometimes you just want a salty bowl of broth but you know you can’t break out the crinkly noodles anymore, this isn’t a college dorm room.  Make this, instead!  

We use whatever mushrooms we have, reduce the number of noodles (otherwise the leftovers don’t keep), and add some Sriracha.

Cheesy Ranch & Bacon Potato

In no way healthy, yet so divine. We discovered this recipe on The Handmade Home years ago, and get cravings for it during the winter months.

Chili

We can’t tell you the top-secret recipe we have.  But, honestly, just dump in a whole bunch of red stuff and some browned meat and you have a winner.  Experiment with it, have fun, and make it your own.

If that still isn’t working for you, Betty Crocker can get you started with this starter chili recipe.  Some popular additions: chocolate, cinnamon, Spicy Hot V8, ketchup, black beans…you get the idea.

Smoky Lentil  (Vegetarian)

We don’t usually do vegetarian meals in this house.We try to skip meat at a meal and all the boys in the house (including dad) lift up their plates to see where it’s hiding. But this lentil soup is hearty enough that it makes the cut.

Chicken or Turkey and Dumplings

Got leftover chicken or turkey?  Put it in this soup and dumpling combo.  This is especially useful after the holidays with all of the leftovers. We use gluten-free ingredients.

Seafood Chowder

We wish we could make a big bowl of clam chowder every week but it’s expensive.

We’ve made this one from Taste of Home without the lobster.  But this one from Food.com is so basic we use whatever we have in the frozen stash.  Rachael’ has a fish and corn chowder recipe we’ve made before that can keep costs down but mimic the taste.
